
Australia’s No. 1 Luxury Single Malt Whisky and Australia’s most celebrated chef join forces
Peter Gilmore, Executive Chef at Sydney’s award-winning Quay and Bennelong restaurants, has been announced as an official Brand Ambassador for Tasmania’s LARK Distilling Co.
Part-time Tasmanian, full-time whisky lover Peter Gilmore has been announced as a Chef ambassador to Tasmania’s Lark Distillery Co.
To announce the partnership Gilmore curated a menu of iconic Tasmanian ingredients, fused with modern Australian and Asian flavours, and paired each dish to a Lark whisky.
On arrival guests enjoyed a selection of Lark Lunar New Year whisky cocktails which are now featured on the menus at both Quay Restaurant, Sydney, and inside Lark’s Whisky & Cocktail Bar The Still, Hobart, for the month of February.
Each dish to follow was carefully matched to a selection of Lark whiskies and served in Quay’s quintessential high style.

Picturesque dishes included: Tasmanian rock lobster, uni butter enriched koshihikari rice, baby cucumber, pinstriped peanuts and umami broth matched to Lark’s award winning Rebellion Chinotto Citrus Cask Single Malt Whisky. This was a remarkably crunchy and textural dish that showed off the purity and sweetness of shellfish.

To finish guests enjoyed new season Tasmanian morello cherries with sabayon a traditional cream concoction whisked with some Lunar New Year Wood Dragon Single Malt whisky and served over panettone and pulled, butter toffee.
The latter was paired with Lark’s ‘Rare & Remarkable’ 1911 Para Vintage Tawny Cask Single Malt Whisky and it was both remarkable and delicious.

This collaboration promises many future collaborations of value, purity and style ones that will no double continue to showcase Tasmanian produce at its very finest.
