As part of our search for the country’s best young culinary talent – as nominated by true industry luminaries – Robb Report’s Culinary Masters’ dinner series is peerless.
This year the ultimate luxury dining experience entails exclusive dinners highlighting the incredible abilities of Josh Niland of Saint Peter, in Sydney’s Paddington and Hugh Allen, executive chef at Melbourne’s Vue De Monde.
Niland is the wunderkind forcing a necessary rethink with a unique and contemporary ‘nose-to-tail’ seafood philosophy, an approach that has rightly seen him garner an impressive international following – Nigella Lawson referring to him, simply, as “a genius.”
Guests will have the opportunity to experience Niland’s lauded approach to sustainability with an exclusively-curated Robb Report menu driven by the man himself on the night. Wine will flow from St. Hugo’s formidable collection, with guests then taken via private cars to One Barangaroo for a pop-up Highball Bar and chance to indulge Sydney’s most luxurious new residence.
The Melbourne experience at Vue De Monde gives credence to Shannon Bennett’s anointment of 24-year-old Allen. To be leading the pass at one of the country’s most acclaimed fine diners speaks of Allen’s skills, with the ex-Noma chef bringing a curated menu punctuated by his unique use of Australian native flavours, paired to wines from Taylors Wines before a post-dinner event at the lavish venue high above the city.
