Sofitel’s newly adorned Darling Harbour, Sydney residence has its very own Champagne Bar in which tomorrow night (Wednesday October 9) Tyson Stelzer, multi-award-winning wine writer will be hosting a very-luxe masterclass.



Not that many of us need to be told to enjoy champagne, Tyson will run guests through a pairing to ensure you get the maximum from your favourite Cuvèe.



From 6.30pm Stelzer and Caroline Dessaulle from Laurent-Perrier will take over the bar presenting five exceptional tipples which have been expertly paired by Jordan Hajek, Chef de Cuisine at the Sofitel. Think Oyster tempura with yuzu and honeycomb salt alongside more traditional pairings such as duck liver pate amplified with charcoal salt.
