Francis Mallmann, an awarded chef celebrated for his Patagonian open-fire-style cooking, has teamed up with Scottish whisky maker Laphroaig in an initiative-first ‘Taste Trailblazers’ program set to showcase culinary pioneers pushing the boundaries of flavour — a notion Laphroaig honours as it celebrates 200 years of crafting whisky that proves unmistakable in quality and flavour.
Sitting far on the edge of the Scotch whisky map is where you’ll find the home of Laphroaig, Islay. This desolate, storm-lashed island off the west coast of Scotland – its Gaelic meaning translates ‘beautiful hollow by the broad bay’ – proves the perfect setting for the production of world-class whisky. From the salty seawater and ocean breeze to the earthy smokiness that comes from the malted barley cold-smoked by traditional kilns fueled by Islay peat, the result is a standout smoky character that Laphroaig has long celebrated.
Mallmann knows all about utilising the elements. The acclaimed chef made a name for himself cooking Argentinan food over fire, his bold techniques and dedication making him the embodiment of the culinary personalities Laphroaig will celebrate through its Taste Trailblazers program. “For me, cooking is all about bringing people together for a memorable experience. There is something special about sharing a great meal with friends,” offers Mallmann.

Mallmann’s unique culinary style comes to life in an extraordinary documentary that captures his journey to Laphroaig’s Islay home, where he shares his mastery of smoke with Laphroaig’s distillery manager, Barry MacAffer, as well as stories of peat, salt and fire – those elements of Islay’s unique geographical location.
