Bar Ombré Opens on a Circular Quay Rooftop

In what is an entirely new direction from the hospitality group behind Salt Meats Cheese, which has expanded to nine concepts Australia wide, is Bar Ombré a rooftop, Mediterranean inspired coastal affair in the heart of Circular Quay.
The drinks list, naturally, complements the laid-back rooftop setting with fresh, simple, well-executed riffs on classic European cocktails and of course, Sydney’s favourite, the spritz. Think pear and maple old fashioned, a vanilla and grapefruit barrel-aged Negroni, and many more. The wine list is filled with Italian wines and new world drops with a focus on biodynamic, organic and vegan wines.

The menu pairs with the beverages, with the Italian backed bar bringing daily stretched cheese, cured meats and wood-baked focaccia to the fore. You can follow the antipasti with plates of fried calamari, crumbed zucchini, pickled chilli, San Daniele prosciutto and burrata with grilled eggplant, or marinated white anchovies with tomato, herbs and breadcrumbs.

Ombré of course is a reference to those golden hours where the hues over Sydney’s skylines blend from one to another and is a theme that is played out throughout the design and menu.
In-line with the European fare, from 6pm to 9pm guests receive a bar snack with their drinks – expect wood-fired crackers and pesto, smoked olives, cured pancetta, roasted peppers and truffle pecorino.
